Made and devoured in a flash  – easy peasy Fruit Yogurt Parfait

1. Add a couple spoonfuls of plain organic yogurt, 1/4 cup organic oats, 1 tsp chia (ground) and 1tsp ground flax (both or just one – you pick – you can also use hemp)

2. Mix it all together

3. Add another couple spoonfuls of yogurt and a spoonful of local honey (or local maple syrup or a couple of drops of stevia)

4. Add cut up berries (local, in season and organic if possible)

5. Top with homemade granola (or more oats if you like) and sprinkle with cinnamon. Refrigerate overnight (or at least a couple of hours)

6. Have them ready for when your kids get home from sports or for a great breakfast! (James says he is smiling and Ian definitely is!!) Glen is not pictured but he loves them too!!

Cancer Prevention Tips

While reading Cancer is Not a Disease by Andreas Moritz, I learned that perhaps this is the best time to wear sunglasses, if at all!

The wonderful ultraviolet light from the sun is one of the most powerful natural medicines the world has ever seen and one way we are blocking it is by wearing sunglasses (and sunscreen and staying indoors, and wearing clothes – you get the point).

By the year 1933, researchers found there were over 165 different diseases (almost every type of cancer, diabetes, hypertension and tuberculosis) for which sunlight proved to be a beneficial treatment but the sun’s healing rays were ineffective if a patient was wearing sunglasses. WHY? Sunglasses block out important rays of the light spectrum which the body requires for essential biological functions.

UV rays in sunlight actually stimulate the thyroid gland to increase hormone production, which in turn increases the body’s metabolic rate which assists in weight loss and improved muscle development. So get yourself some sun sans the sunglasses and sunscreen but don’t be a silly and fry yourself…use some common sense.

Can using this toothbrush and rinsing with this really decrease your risk of cancer?

Data collected between 1986 and 2002 found that men with gum disease had a 63% higher chance of getting pancreatic cancer, even if they’d never smoked. It is believed that gum disease is a sign of increased inflammation and is linked to heart disease, stroke, diabetes, respiratory issues and lung infections.

Two simple tips:

1)      Rinse and swish with salt water several times per day is usually enough to prevent and reverse gun disease and simple enough to do! (Use sea salt or Himalayan salt)

EXERCISE….I know, but I had to bring it up because it really is THAT important!

Exercise is a BENEFIT to preventing cancer and also one of the best ways to combat treatment-related fatigue is you are currently undergoing chemotherapy.

  • Cancer cells are oxygen deprived cells that don’t want oxygen…BAM…along comes exercise which floods your body with oxygen and cancer cells die with oxygen…make sense?
  • Exercise also improves your immune response

Beneficial Exercise Tips

  • If you have cancer don’t do strenuous exercise.  Light walking, stretching, pilates and yoga are wonderful additions to your week. Try this beautiful relaxing routine – Wild at Heart or some stretching
  • If you exercised before cancer keep it simple while undergoing treatments and if you didn’t exercise before cancer keep it simple while undergoing treatments!

I can’t rest…I’ve got to get this done!!

Your immune system needs SLEEP!!! Eight to nine hours in complete darkness. A weak immune system CANNOT keep your body clean inside which results in congestion and threatens cellular life.

Your body is a beautifully well oiled machine that wants to be in perfect health.  It has circadian rhythms that keep your body working optimally but that we often ignore or just don’t know about.

If you continually go to bed after 10pm you will enforce a hormonal shift in your body that can lead to chaotic conditions in your body. The secretion of melatonin (one of the pineal gland’s most powerful hormones) starts between 9:30pm-10:30pm (depending on age), inducing sleepiness. If you ignore your internal clock, you throw this and many other hormonal cycles out of balance.   The pineal gland controls:

  • Reproduction
  • Sleep and motor activity
  • Blood pressure
  • The immune system
  • The pituitary and thyroid glands
  • Cellular growth
  • Body temperature and many other vital functions

I know I’ve had my share of late nights and will do my very best to honor my body and put it to sleep earlier and to rise earlier. If you rise around 6am-7am (and went to bed around 10pm), then you are following a natural sleep/wake cycle. If you are getting out of bed after 8am-9am then you are messing with your elimination cycle (constipation anyone??). Waste material that accumulated in your rectum and bladder wants to be eliminated between 6-8am. If you are sleeping in because you went to bed too late, this waste is held instead of eliminated and perhaps even partly reabsorbed. Why can chocolate help make us skinny?

Chocolate is the number ONE food craved by women – and that’s not a bad thing if you eat the right chocolate.

 

 This is for all of you that don’t want to drown yourselves in white flour & sugar or butter anymore.  I’ve heard it so many times, “I can’t just have one chocolate (bar) or chocolate chip cookie”.  I’ll admit that I have a “sugar problem” too and have been known to binge on cookies and chocolate, so if you have a sweet tooth like me or a tendency to eat more than “one” cookie, there is a way to still indulge your sweet tooth knowing that it is delicious and nutritious.  I have spent years sifting through recipes and replacing my cookbooks and dessert recipes and have compiled the recipes in this guide to share with you.  It has helped to keep me away from baking cookies or eating sickly chocolate bars.

Raw Carrot Crackers

One of my clients brought me some of his homemade crackers and I was hooked!! They are delicious!! The next time he was making them, I tagged along so that I could make them for myself. These crackers are super easy to make and store well in a sealed glass container. Enjoy sprinkled over salads or with a dip such as hummus.

Ingredients:

  • 4 cups of carrots cut in chunks
  • ½ cups onion chopped in chunks
  • 2 garlic cloves
  • 3 stalks of celery
  • 1/8th cup olive oil
  • 1/8th cup tamari
  • 1 tsp each – curry, turmeric, cumin
  • 3/4cups soaked walnuts
  • ½ cup soaked cashews
  • ½ cup soaked almonds
  • ½ cup soaked sunflower seeds
  • ½ cup pumpkin seeds and ½ cup sunflower seeds

Figure 1 Process all the veggies until smooth – may have to do a couple of batches

Process all ingredients except ½ cup pumpkin seeds and ½ cup sunflower seeds. Depending on the size of your food processor you may have to process two lots and then mix by hand.  I process the carrots, onion, garlic, and celery, oil and tamari first, place in a bowl and then process the other ingredients except pumpkin and ½ cup sunflower seeds.

Figure 3 Add the seeds last and only mix for a short time to keep them chunky – adds a great texture

Mix everything together and then add the pumpkin and sunflower seeds. Place about half the mixture on one dehydrating tray with the liner and the other half on another lined tray (you may use three trays). Thickness should be about ½” in a square and then cut into squares.  This helps it to dry faster and also to have lovely square crackers.

Dehydrate for 8-10 hours and then flip to screened tray and dehydrate for another 3-5 hours.  Make sure they are dried out completely. Crackers may be stored in an air tight container for up to a month. If you need to crisp up put back in dehydrator.

Live enzymes are essential to digestion. Enzymes are needed to break down the food we eat into a usable form for the body. Eating live raw foods leaves us feeling energetic and vibrant!

Raw foods are better quality; therefore you eat less to satisfy your nutritional needs. The heat of cooking depletes vitamins, damages proteins and fats, and destroys enzymes which benefit digestion. Torch the Fat Class – this class starts with a warm up and using a variety of equipment we ramp it up and add in some high-intensity interval training. You always work at your own level (what is hard for your neighbour may be easier or harder for you). It is a head to toe workout that will torch your fat!

High-intensity interval-type training also boosts human growth hormone (HGH) production. A 2003 study published in the journal Sports Medicine found that “exercise intensity above lactate threshold and for a minimum of 10 minutes appears to elicit the greatest stimulus to the secretion of HGH.”

Restorative Pilates and Meditation – Ahhh, time for relaxation and rejuvenation.  A combination of Pilates, Yoga, Melting and Meditation.  Amazing for anyone who has any injuries. Class ends with breathing and meditation.

Why do we do bursts of intense exercise in class….

Because they help you to get naturally stronger, leaner, fitter, healthier and even smarter. Sure some low level cardio is good for the heart once in a while, but the real results come from the anaerobic work.

Because it stimulates the growth hormone. The take-home message once again – if you want to get the most advantage from time spent exercising, pick those exercises that stimulate release of HGH naturally. It’ll take less time and you’ll show the results even sooner.

Short burst, high-intensity types of exercises create a phenomenal “anti-aging” effect. It’s a commonly ignored exercise technique that can make a most dramatic difference in your health.

The two primary anti-aging effects created by these types of exercises are:

  1. Reduced age-related telomere shortening, and
  2. Increased production of human growth hormone (HGH)

What is a Telomere?

Your body is made up of some 10 trillion cells, and according to one theory, you age because your cells age. Therefore, if you can control the aging process in your cells, you should be able to control your aging, and this is where stopping age-related telomere shortening comes in.

Your telomeres shorten every time your cell divides, starting at the moment of conception. Think of your telomeres like the ends of your shoe laces.  You have the ability to keep the ends from shortening by what you put in your mouth, your lifestyle and your exercise!  WOW!!!
The pituitary gland is about the size of a pea and it sits at the base of the brain behind the nose. Even though it is small, this does not take away from its importance to the body. It produces human growth hormone (HGH), which is quintessential for growth when you are an adolescent. Once you are fully grown, HGH is responsible for the proper functioning of organs and tissues.

Superb Veggie Lasagna in the Raw

This is a vegetarian raw delight that will leave you feeling full but light!  It looks intimidating to make but break it down and it is worth the effort! Can be prepared over several days if needed. This recipe was concocted  from various raw recipe books

The Cheese:

  • 2 cups raw almonds (or any other raw nut), soak for 1 hour or more
  • 2 tbsp fresh lemon juice
  • 2 tbsp nutritional yeast
  • 1 tsp Himalayan salt (or any salt besides table salt)
  • Up to 6 tbsp water

Combine all ingredients except the water and pulse a few times in your food processor.  Add water until the texture becomes fluffy like ricotta cheese.

*Tanya’s tip – this can be prepared beforehand and frozen until needed

The Tomato Sauce:

  • 2 cups sun-dried tomatoes, soaked for at least two hours ) unless you buy them packed in oil)
  • 1 medium tomato, quartered
  • ½ a small onion quartered
  • 2 tbsp fresh lemon juice
  • ¼ cup Extra-virgin Olive Oil (EVOO)
  • 1 tbsp real maple syrup
  • 1 tsp Himalayan salt (or any salt besides table salt)
  • Slice of hot pepper (as much as you would like for how spicy you like your food or none at all)

Drain sun-dried tomatoes and place all Tomato Sauce ingredients in your Vita-Mix or food processor and blend until smooth.

*Tanya’s tip – this can be prepared beforehand and frozen until needed.  The sun-dried tomatoes can also be frozen.

 The Pesto

  • 2 cups packed spinach or basil leaves (or experiment with other greens if you would like)
  • ½ cup pistachios or almonds or pine nuts
  • ¼ cup EVOO
  • 1 tsp Himalayan salt (or any salt besides table salt)
  • ½ tsp ground pepper, freshly ground

Place all ingredients in a food processor and blend until combined.  Can be chunky or smooth – your preference!

*Tanya’s tip – this can be prepared beforehand and frozen until needed.

 The Filler

  • 1 to 3 Zucchinis depending on how many portions you are making, sliced paper-thin. Best to use a mandolin
  • 2 tbsp EVOO mixed with fresh herbs such as oregano, thyme, basil
  • Salt and pepper
  • Sliced tomatoes
  • Chopped fresh basil

Let the zucchini slices marinate for about 20 minutes.

Take 1 zucchini and use your vegetable spiral (if desired) and make zucchini noodles.  Mix them with some pesto and let sit.

Putting it all together:

Place 3 pieces of thinly sliced zucchini in a triangle formation on a plate.  Top with cheese, then tomato sauce, then pesto and then a slice of tomato.  Repeat starting with the thinly sliced zucchini again, cheese, tomato sauce, pesto and tomato slice.  Top with zucchini noodles and chopped basil.  Make as many portions as needed.  Refrigerate if not serving right away but eat within the hour after putting it all together.

All of the sauces can be frozen for months so be sure to make extra for when zucchini season rolls around and you want a quick fix of raw lasagna!

A sea of yellow, a landscape of golden kisses or a pest that you try to kill…..how do you view these greens that grow on your lawn and contain an abundance of nutrients?

Currently I’m taking a Wild Edibles Course and learning all about the free food that is available to us when we walk out our doors! And to learn even more, I attended the Dandelion Day in Peterborough at the beginning of May which was a great event. I have a feeling you are going to be eating more wild greens in the years to come…dandelion leaves are for sale in the supermarkets now, what’s next?

Dandelions are one of the healthiest greens you can consume, especially if it is plucked fresh from your backyard that hasn’t been sprayed for weeds! Adding to a smoothie is just delightful…check out the Wild & Crazy Morning Energizer Smoothie below!

Raw Coconut Curry Sauce with Steamed Vegetables

Coconut Curry sauce with Brown Rice and Veg!

  • 1 cup macadamia nuts (soaked for 30minutes)
  • 1 tablespoon raw coconut butter
  • 1 pitted date
  • 1 clove garlic
  • 4 tablespoons curry powder
  • ½ tsp turmeric
  • 2 tablespoons chopped sweet onion
  • 2 cups coconut water OR 2 cups coconut milk
