Avocado Burrito for One
Replace the traditional wrap with romaine, butter leaf lettuce or collard greens. You can also use Nori sheets and rice wraps.
- A gorgeous organic leaf of green (collard, romaine)
- 1 avocado
- ½ – 1 clove of garlic, minced
- 1 tbsp. parsley and cilantro
- Pinch of cayenne pepper and turmeric
- ½ lemon
- A few slices of cucumber, peppers, any veggie that you like
- A couple of slices of tomatoes
- Take the avocado and mash it with the minced garlic, parsley, cilantro, cayenne pepper, and turmeric. Squeeze in the lemon and mix together.
- Lay out your leaf, line it with cucumber and tomatoes and cover it with guacamole. Wrap it up and enjoy!
