Bok Choy, Red Cabbage and Carrot Salad

 4-6 servings

  •  4 medium stalks bok choy, thinly sliced
  • 2 cups thinly sliced red cabbage
  • 2 medium corrots, thinly sliced
  • 2 scallions, thinly sliced
  • ¼ cup cilantro (optional)
  • ¼ cup toasted almonds (sliced or slivered)
  • ¼ cup Sesame-Ginger Dressing

 Combine all the ingredients in a serving bowl and toss together.

 Sesame-Ginger Dressing

  •  ¼ cup olive oil (or flax oil)
  • 2 tbsp dark sesame oil
  • 1/3 c rice or Raw Apple Cider vinegar
  • 1 tbsp maple syrup
  • 1 tbsp soy sauce
  • 1 tsp grated fresh ginger
  • 1 tbsp sesame seeds

 Combine all ingredients in a jar and shake.  Refrigerate. Shake before using.
