Chia Seed “Raw-mazing” Pudding
Glen and I lived in NYC from 1998-2001 and it was a great adventure and super fun time of my life! Over the years since we have left we have taken our kids there many times and there are always new areas to explore.
One, is the unbelievable choice of food. Since we left over a decade ago, I can’t believe the amount of juicing, raw and other healthy places that have popped up on every corner. We were in NYC recently, walking about & checking out what to eat for breakfast when I stumbled upon the Chia Seed Pudding…it was the last one and I scooped it up…delicious! The next day I hurried back and scooped up another one.
Upon our return to Bobcaygeon, I was craving this pudding…but alas, none to be had on our main street. I had tried in the past to create one but it never tasted how I wanted it to taste. With the NYC Chia pudding still singing to my taste buds I was able to recreate it to suit them!!! Here is a picture of my homemade pudding…give it a try and let me know what you think.
- 1 cup coconut milk
- 3 tbsp chia
- 1/2 tsp cinnamon
- 1/8 tsp cardamom
- 1/2 tsp vanilla
- 8 drops stevia
Add all the ingredients together and let sit for a few hours or overnight. The chia seeds expand and soak in all the liquid. Enjoy
Chia seeds are a great thickener, so you can also top this tasty treat with a strawberry (or any berry) puree. Take a cup of berries and a tbsp or two or chia seeds, a splash of lemon, a sprinkle of cinnamon and blend it to the consistency that you like!! If you need some extra sweetness, add a few drops of stevia or pureed dates.
