Hemp Kale Salad

This is one of my favourite salads (quantities adapted slightly) from Leanne Vogel’s e-book The Keto Beginning: Complete Guide +30-day Meal Plan.

I picked up her e-book and have been loving a lot of her recipes. I also based many of the “fat snacks” that I offered in my Gain Energy Lose Fat sessions from her book.

I use this dressing on many of my other salads now instead of using maple syrup based dressing…I’m loving the new flavours.

Salad Ingredients:

1 cup chopped kale

2 cups chopped romaine lettuce

1 soft boiled egg (can use two eggs)

½ cup diced chicken (optional)

½ avocado sliced

2 tablespoons hemp hearts

Mix this all up in a big bowl.

Dressing (mix in mason jar and pour over salad…make extra for next day’s salad):

2 tablespoons nutritional yeast

2 tablespoon balsamic vinegar

1 tablespoon olive oil or MCT oil

1 tablespoon mixture of oregano, thyme, basil, parsley – whatever suits your fancy.

Himalayan Salt and pepper to taste

Dressing will be thick. Mix it into the salad and enjoy!!!!
