Homemade Cashew Yogurt
After years of pondering recipes and being scared to make my own yogurt (you know, you invest in the ingredients and your time and the end result hits the garbage can), I have finally tweaked a recipe and I love it.
I love the taste of yogurt but stopped eating it because it bloated my belly. I am thoroughly enjoying mixing this with 1/4 cup frozen organic berries and my homemade granola or Raw Power Granola. YUMMY!!!
- 1 ½ cups cashews, soaked for at least 2 hours, drain and rinse
- 1 cup water
- ¼ tsp. probiotic powder or 1 probiotic capsule (open it up and pour it in- discard outing shell)
- 1 ½ tsp vanilla powder ( I love Giddy Yo Yo or Bullet Proof)
- 1 tbsp. local or raw honey or 2-3 drops stevia
- Pinch of sea salt
- Place all ingredients (except water) in a blender. As you begin to blend, slowly pour the water in and blend for about 3-4 minutes until everything is smooth. You may need to scrape down the sides.
- Pour into clean wide mouth mason jar (maybe use two – when I used one it spilled over the top during fermentation)
- Store in a dark cool space with the lid slightly ajar for 24-48 hours.
- After that time, stir it and put it in the fridge, covered. It will continue to thicken while chilling. Once chilled, it is ready to eat.
- Enjoy it with a ¼ cup berries, ¼ cup homemade granola.
