yogurt parfait 008Homemade Kid Loving Granola

I like to send my kids off with a healthy breakfast and one of them is Kid Loving Granola….with my secret ingredients. This granola is also used in the Yogurt Parfaits, and can be a base for Chia Seed “Raw-Mazing” Pudding. This is also a quick and nutritious snack.

Makes about 12 cups

Ingredients – (I buy my cinnamon, nuts, coconut oil and sugar from Upayanaturals)

2 cups of quick oats and 2 cups of old fashioned oats (Organic)

2 cups any nuts (we use almonds and pumpkin and I chop them up in the food processor)

¼ cup sunflower seeds

2 cups shredded coconut

2 tablespoons cinnamon (I use organic cinnamon from Upayanaturals – yummy)

¾ cup coconut oil (melted)

½ cup local honey (mix in with melted coconut oil)

¼ cup coconut sugar (or you can skip the honey are use ¾ cups of coconut sugar)

¼ cup ground flax and/or chia

 Directions:

Preheat oven to 325.

Melt coconut oil and add honey. Mix oats, nuts, sunflower seeds, coconut sugar and cinnamon. Add oil and honey and stir thoroughly. Evenly distribute on two cookie sheets covered with parchment paper.

Cook at 325 degrees for about 40 minutes, stirring every 7-10 minutes as it can burn quickly.

When baked to your satisfaction remove and let cool for about 2 minutes then add ground chia and flax seed. Mix. Let cool. Put granola into mason jars and it’s ready to go.

 

My kids don’t like any chopped fruit but you can add raisins, cranberries, dried cherries to your bowl before serving. I also like to add a tablespoon of raw coco nibs and a teaspoon of organic powered vanilla and serve it with my homemade almond milk.

Another nutrition boosting tip is to sprinkle Hydrolyzed Collagen on their granola and a couple of drops of Vitamin D. My kids are older now so they typically get their own food so I add these extra ingredients to other dishes I’m making if I can’t sneak them in here.
