When I was growing up, Snickers was one of my favourites and if you’ve read about my sugar addiction in Cookie Dough in the Dark, you will understand why The Skinny on Chocolate is so important to me. I love having some “sweetness” in my life but the other stuff was slowly killing me. This is a yummmmmmy addition to my lifestyle of shifting to healthier choices.

So as you start to wind up for another Valentine’s Day, check out this great recipe and the other 10 included!!  Do you want the Skinny on Chocolate? Mark Monday February 13th on your calendar and join The Skinny on Chocolate Workshop. 

Base:

  • 1 cup organic peanut butter (you could use almond or other nut butter)
  • ½ cup Juice Plus+ Whole Complete Chocolate
  • ¾ cup shredded coconut
  • 5 pitted medjool dates
  • 1 tsp. coconut oil, melted or soft

 

Put everything in your food processor and blend until well combined

and press into 8×8 pan lined with parchment paper and put in the freezer to set.

 

Caramel Layer:

  • 7 pitted medjool dates
  • ¼ cup organic peanut butter
  • ¼-1/8 cup almond milk
  • ¼ tsp. salt
  • ½ cups peanut pieces or whole peanuts

Blend together (EXCEPT peanuts) until smooth and spread on base. Sprinkle peanuts on the caramel layer and freeze.

 

Topping:

  • 1 cup vegan chocolate chips (like Enjoy Life)
  • 1 tsp. coconut oil

Melt together and pour over caramel layer

Freeze until set. Cut into pieces and enjoy!
