carrot-cakeSo many of you have requested this recipe because it tastes so delicious!!!

You’ve said, “I’ve got soooo many carrots, what can I do with them?”  You’ve watched the video on my Facebook Page and some of you even came over wanting to taste it!!  What fun! Well, you can make a yummy cake in 5 minutes.

What you need…..


  • 1 cup carrots (from your garden or farmer’s market!!)
  • 2 c walnuts
  • 1 c raisins
  • 1/2 cup shredded coconut
  • 1/8 cup maple syrup
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1/2 tbsp water (less or more depending on how sticky you want your cake)
  • 2 tbsp ground flax or chia
  • 1 -2 Juice Plus capsules (open them up and empty contents for an added whole food boost- optional)

Put everything in your food processor and blend until desired consistency. Keep it chunky or else it will be too smooth. I add each item one by one and give it a little pulse. Then put the batter in a glass 8″ x 8″ pan, unless you eat it all before it makes it in there!!! Put it in the freezer. WHY? This helps to keep the cake from getting mixed in with the icing when you spread the icing on top.


  • 1 cup cashews, soaked for at least 30 minutes to soften (can do overnight), drain and rinse
  • 1-2 tbsp fresh lemon juice
  • 1-3 tbsp water as needed (for desired thickness)
  • 1/8 cup maple syrup
  • 1 tsp vanilla
  • 2 tbsp cocount oil
  • 2 tbsps. vanilla Whole Complete Protein Powder (optional but makes it tastier and creamier)

Put everything in your food processor and blend until smooth. Take cake out and spread on top.

It’s that simple. And delicious and nutritious.
