Sugar Kissed Pecan Mylk
Once upon a time I was known to make pecan pies and butter tarts and consume way too many of them! I had to stop myself from making them because I didn’t have any self control!
One quick trick I learned was to have a (maybe three) pitted date with a pecan inside and believe it or not, without all the pecan filling and pastry this did the trick!
I’ve always loved the creamy caramel taste and have found another recipe that is delicious, nutritious and satisfies the caramel craving. This recipe comes from The Simply Raw Kitchen by Natasha Kyssa.
Ingredients (buy organic where possible):
- 1 cup pecans soaked for 8 hours and rinsed
- 3 cups water
- 3 tbsp maple syrup or a few drops of stevia (or even a pitted date or two)
- 2 tsp vanilla extract or powder
- ½- 1 tsp ground cinnamon
- 1/8tsp Himalayan salt
- 1 tbsp coconut oil
Blend in your vitamix or blender until smooth. You can use mylk bag to strain the mixture if you like a silkier texture.
Enjoy it slightly warmed if you wish.
Pecans are a good source of vitamins A,B, and C, iron, calcium, potassium and phosphorous.
