Savory Coconut Curry with Mixed Fall Vegetables

fall veggies Using whatever fall vegetables you have on hand, get creative and enjoy this lovely warming curry on a lovely fall or winter day! Inspired by Heather as we were discussing what she had made for dinner one night before her training session with me!  Couldn’t resist how wonderful it sounded so I wanted to share it with you.

Ingredients:

  • 1 tbsp coconut oil
  • 1 onion, chopped
  • 1-2 cups cauliflower, bite sized pieces
  • ½ cup broccoli, bite sized pieces
  • 1 yellow pepper, bite sized pieces
  • ½ – 1 cup fennel, bite sized pieces
  • 1-2 cups chopped beet tops, kale, Swiss chard, spinach – any green that you would like
  • 1 can light coconut milk
  • 1 -2 tsp each of turmeric, cumin, curry power
  • 1-2 tbsp fresh cilantro or 1-2 tsp dried coriander
  • 3 bulbs of garlic crushed
  • ¼” to ½” piece of ginger crushed with garlic press or chopped into tiny pieces
  • 1-2 tablespoons nuts of choice (optional) but gives it a nice crunch
  • ¼ cup raisins
  • 1-2 tsp honey

Add coconut oil to frying pan and let melt. Add onions and let soften for about 5 minutes.  Add the rest of your vegetables except the greens (save until the end).

Add the turmeric, curry powder, cumin and dried coriander if using (save fresh for the last step). Mix with vegetables.

Add garlic and ginger- stir for 2 minutes to integrate all the flavours!

Smells delicious!!

Add the can of coconut milk, raisins, nuts, honey and let simmer until desired tenderness of vegetables!

Almost finished!

Add fresh cilantro and greens and wilt for a couple of minutes.

Enjoy

Serve on a bed of rice or quinoa with some spaghetti squash or sweet potato!!  YUMMY!!

The Autumn Detox Cleanse

It’s time to Purge the OLD stuff that’s been sitting around all summer.

I don’t know about you but for some reason the summer hits, the kids are out of school, the routines are loosened and my healthy eating habits take a little hiatus!  You’d think the donning of a bathing suit would keep me in order but the free flowing skirts and tops can make me forget about the snugness of my fall clothes…yikes. More importantly though, after a few weeks of reckless abandonment I feel DISGUSTING, tired, irritable and ready to get back into healthy living.  The key for me is to be aware of the choices I make and the consequences that are rearing their ugly head and to keep shortening this stage until it disappears and I feel SUPER FAB all year long. And that is a whole other blog for another day.

I have posted a plethora of smoothie and juice recipes and this is one area that stays put all year long. I can’t imagine how I’d feel if I didn’t keep this healthy habit going. During the summer, I love picking edible weeds, such as plantains, chickweed, dandelions etc. from my garden and all of my fresh produce and making refreshing juices & smoothies with them.  I get immense pleasure from this habit and it saddens me as my garden begins to dwindle and slowly gets put to rest.

But not to worry, as the leaves change colour and shed, it is a reminder that change is in the air and that we also need to purge.  Including a fall detox into your life may help to stave off seasonal colds, keep your immune system healthy and prepare your organs for the colder months that lie ahead.

According to Health Coach and Integrative Nutrition Specialist Jolene Hart, the fall detox should be all about the lungs and the large intestine. In both alternative and conventional medicine theory, these organs are linked to skin and breathing problems like asthma, eczema, rashes and dry skin—all of the most common things to ail us in the colder months.

To support the lungs and large intestine, Hart recommends limiting sugars, flours, dairy and alcohol for a healthy, mucus-free stomach. Also consume Fenugreek tea (or capsules) to open up the nasal passages. Include warming spices like cinnamon, nutmeg and cloves into your foods which actually support both intestinal and respiratory health.

For a fall detox cleansing juice, stick with fall fruits and vegetables. Many believe it’s best to have fresh fruit juices in the morning and vegetable juices in the afternoon. Fall foods (organic when possible) to use in your cleansing juices are grapes, apples, beets, leafy greens, and a hint of lemon (but don’t overdo the citrus). Here’s one of my favorite fall detox juice recipes:

DETOX BEET & APPLE JUICE

Ingredients

1 medium beet

1 large apple

radishes

1 cup fresh kale leaves

Method

Place all ingredients in the juicer or blender and process.

We hear a lot of buzz in the Spring to detox but the Fall is an equally important time to do a cleanse.

fall detox    Why?

It’s a natural time of transition. Use this time to reset your body and mind and prime your system for a winter of wellness. After a playful summer, loosened rules and routines, kickin’ back and relaxing, September is all about action – back into high gear with kids back to school, routines and sports. WHEW, Busy Mama, let’s slow down a little this fall and restore that mind and body of yours with some detoxing.

According to Ayurvedic theory, by the time autumn rolls around we have accumulated plenty of heat in our tissues from the summer and we need to recognize this and deal with it before it turns into mental and physical burnout (which can lead to colds, flues, instability and anxiety…sounds like fun, huh?)

So, what can you do this fall that is different from last fall?

1.  As hard as it may seem, Busy Mama….you need to slow down. Yep, take your foot off the gas pedal. Perhaps go the speed limit and take time to check in with the scenery around you!

Slowing down supports your liver’s natural ability to remove toxins from the body. Remember that the liver is the body’s natural detoxifier (it processes the foods, drinks, drugs, chemicals you breathe and put on your skin etc.). When that liver gets overloaded you can get migraines, rashes, irritable, angry, tired, sick and gain or lose too much weight. I don’t think you want all this TOXIC SLUDGE in your body, so remind yourself to slow down.

What steps can you take to slow down?  Adjusting your habits just a little can have a major impact on your health. Take a moment to write down a few things that you will slow down, for example, how you will relax when you are eating so that you will actually taste your food. Will you notice your breath and where it’s going in your body? Will you take a moment in your day to stretch, walk or do something physically active? Will you learn to say “no” to things you really don’t want to do?

2. What’s going on in that head of yours?

I know a lot of detoxes focus on food, but not the Busy Mama Detox. Besides providing menus and healthy detoxing tips, we know that to be successful you need to be aware of the mumbo-jumbo that’s going on inside of you.  An overactive mind, habitual rushing, multitasking, negative thoughts and more can lead to an overtaxed mind and nervous system which can lead to adrenal fatigue, insomnia, irregular menstrual cycles, indigestions and unwelcome weight gain.

Check in with yourself and see what’s going on upstairs. I know you might want to ignore it, but pull it out, dust it off and get real with yourself. Let your light shine!

 3. Detox your Diet

It’s time to pay attention to what you are putting in your mouth and how it is making you feel. Are you nourishing your body with healthy, cleansing foods?
