Twice Baked Potato
Kids love the crispy outer skin of the potatoes! Potatoes are rich in complex carbohydrates, vitamin C and B6. Plus with all the added goodness that is added this are a great meal with a salad or as a side dish or snack! I also make extra and they can be frozen or kept in the fridge for about 5 days.
1 potato per person, washed – Any potato will do, but I like Yukon Gold or baking potatoes
1-2 tablespoons ghee or coconut oil
1-2 tbsp grass fed collagen
