A sea of yellow, a landscape of golden kisses or a pest that you try to kill…..how do you view these greens that grow on your lawn and contain an abundance of nutrients?
Currently I’m taking a Wild Edibles Course and learning all about the free food that is available to us when we walk out our doors! And to learn even more, I attended the Dandelion Day in Peterborough at the beginning of May which was a great event. I have a feeling you are going to be eating more wild greens in the years to come…dandelion leaves are for sale in the supermarkets now, what’s next?
Dandelions are one of the healthiest greens you can consume, especially if it is plucked fresh from your backyard that hasn’t been sprayed for weeds!

While I am out walking my dogs I will pick some dandelion leaves and chew them while walking. I’ll bring some leaves and flowers home to add to my smoothies, juices or salads. I even added some finely chopped dandelion leaves to my guacamole!! You’d never guess they were in there!
So why should we include bitters in our sugar laden diet??
Unlike sugars that increase blood sugar, insulin, and hunger which can then lead to obesity and Type 2 diabetes — research indicates bitter foods can have the opposite effect, moderating both hunger and blood sugar.
According to the article, “Why Bitter is Better” by Dr. Andrew Weil, bitter foods stimulate the liver to produce bile, which is an important part of optimal digestion. Bile emulsifies fats and renders nutrients — especially fat-soluble ones such as vitamins A, D, E and K — more available. Another way to express this: Bitter foods challenge the liver. They make it work and help it to remain healthy, just as muscles challenged by exercise function better than ones that atrophy from underuse.
Why are dandelions on my lawn?
The dandelion plants is roots deep and draws up untapped nutrients and minerals to help heal our lawns. It aerates the damaged soil and attracts earth worms. So instead of killing them understand that they are trying to help your lawn…always best to address the root cause and tend to the soil quality of your lawn etc. instead of further destroying it with chemicals!
On my quest to integrate these highly nutritious wonders into my diet, I adapted a smoothie recipe from Thrive Energy Cookbook by Brendan Brazier…here is my Wild and Crazy Smoothie…PS You cannot taste anything with the added dandelions – I tried it with and without just to test it. As your taste buds adjust, begin to add more of these nutritional powerhouses to your smoothies
Wild and Crazy Morning Energizer Smoothie
2 small pitted medjool dates
1 small banana
½ cup blueberries
¼ cup rolled oats
1 tbsp almond butter
1 tsp chia seeds
½-1 tsp pure vanilla
½ cup coconut water
½ cup almond milk (or make your own)
3 dandelion flower heads and 3 dandelion leaves (don’t use stems)
1 scoop or packet Vanilla Juice Plus Whole Complete
2 cups ice
Put everything in your vitamix and blend!
In my Wild Edibles Course, Andreea Fegan posted this lovely sentiment on dandelions and I wanted to share it…..
One by one, I think we have the power to really make an impact and to help one another realize what wealth lies beneath our feet. That nature isn’t perfect – it’s MORE than perfect, and that these “green lawns” are supposed to be glistening in gold. I just learned today that dandelions don’t take away nutrients from the grass around it but rather dig deep into a different layer of soil, and bring up calcium…when they die off, they also create tunnels for worms to dig deep into layers they couldn’t before. They’re sweet, and bitter, and bunnies love them…and they’re just hanging out, free, shining back at us. Go get ’em. And love them, talk to them, smell them, and smile deep and show gratitude for all these silent, humble gifts.
