Twice Baked Potato

Kids love the crispy outer skin of the potatoes!  Potatoes are rich in complex carbohydrates, vitamin C and B6. Plus with all the added goodness that is added this are a great meal with a salad or as a side dish or snack! I also make extra and they can be frozen or kept in the fridge for about 5 days.



1 potato per person, washed – Any potato will do, but I like Yukon Gold or baking potatoes

1-2 tablespoons ghee or coconut oil

1-2 tbsp grass fed collagen

1-2 tbsp rice bran – tocoteriels

¼ cup grated cheese or nutritional yeast

4-6 pieces of crumbled cooked bacon

1 tsp turmeric            (optional)

Salt and pepper to taste


Heat oven to 350 degrees

Prick potatoes and then bake for 30-45 minutes until tender

Cut in half lengthwise and scoop out the insides being careful not to rip the peel

In a mixing bowl, mix the insides of the potatoes with the rest of the ingredients

Place back into skins which are placed on a cookie sheet and bake for another 15-20 minutes until warmed!

************Or quick and easy…bake the potatoes, cut in half when cooked. Sprinkle with grass fed collagen, a dollop of oil or butter, grated cheese and cooked bacon (crumble it up)

Place under broiler for a couple of minutes to melt cheese. Serve with organic sour cream and lots of veggies!
